# What You'll Need:

→ Tortillas

01 - 4 large flour tortillas

02 - 7 oz shredded cheese (cheddar, Monterey Jack, or Mexican blend)

03 - 5 oz cooked chicken breast, shredded
04 - 1 small red bell pepper, diced
05 - 1 small zucchini, diced
06 - 1 small red onion, thinly sliced

# How to Prepare:

01 - If including chicken and vegetables, sauté diced vegetables in oil over medium heat for 3 to 4 minutes until softened. Add shredded chicken, ground cumin, chili powder, salt, and pepper. Stir and heat through. Set aside.
02 - Lay one tortilla flat and sprinkle half with approximately 1/4 of the shredded cheese (about 1.75 oz). Add a portion of the filling mixture and sprinkle with chopped cilantro. Top with another 1.75 oz of cheese, then fold the tortilla in half to enclose the filling.
03 - Heat 1/2 tablespoon of oil or butter in a large skillet over medium heat. Place the folded tortilla in the skillet and cook each side for 2 to 3 minutes until golden brown and cheese is melted. Repeat with remaining tortillas.
04 - Cut each quesadilla into wedges and serve immediately with salsa, guacamole, or sour cream as desired.
